Ingredients:
6 c vegetable broth
1/2 c pearled barley
2 carrots, peeled and finely chopped
2 stalks of celery, finely chopped
2 small potatoes, peeled and finely chopped
1/2 medium sweet onion, minced
2 cloves of garlic, minced
1 tsp sea salt
1/2 tsp pepper
1/3 c fresh parsley
Heat the stock, barley, carrots, celery, potatoes, onion, garlic, salt, pepper and seasonings. Bring to a boil. Reduce heat and simmer for 30-40 minutes.
Prep time: 15 minutes
Cooking time: 30-45 minutes
Serves: 4-6
